Fresh Summer Roll With Whole Grains and Avocado

This easy to make fresh summer rolls snacks are the perfect appetizer to munch on that will keep you full and satisfied until your next meal. You don’t have to wait for the main course to have something healthy, and satisfying. This recipe is so versatile and does not need any cooking at all. Enjoy as a snack or even as a meal. Create as many combinations however you like. This recipe is using instant whole grains, and fresh ingredients including avocado.

Ingredients

  • 6 Leaves of Lettuce Cut in half (You can use regular Romaine, or for more flavor we use Butter Lettuce)
  • 12 8-inch Rice paper wrappers (Look for this Vietnamese Rice Paper Wrappers Brand)
  • 12 to 24 sprigs fresh herbs (Mint, cilantro, parsley, Basil or any herbs you like)
  • 12 3 to 6-inch very thin cucumbers, zucchinis or even asparagus spears (Cut into thin lengthwise strips)
  • 2 carrots, cut into thin long strips (¾ cup)
  • 1 Pack of heated Ready to Eat Microwavable Rice Mix (We use the variety from Seeds of Change Rice Mix)
  • 1 avocado, peeled, seeded, and cut into 12 slices

Instructions

  1. Heat Up the Pack of Seeds of Change Rice Mix in the microwave
  2. Pour warm water into a pie plate or wide bowl. Carefully dip a rice paper wrapper into the water for 3-5 seconds; transfer to a clean work surface. Let stand several seconds to soften. Place a layer of lettuce, then a spoonful of rice mix, herb sprigs just below the center of the paper. Arrange some of the cucumbers, zucchinis, or asparagus, carrot, and avocado to finish the assembly.
  3. Fold bottom edge of wrapper over filling and tuck it under on other side while pulling the roll toward you. Fold in sides to seal in filling. Continue rolling tightly. Repeat with the remaining rice paper wrappers, herbs, and vegetables. Serve with dipping sauce.

For Dipping Sauce

  1. 1/4 cup of reduced-sodium Gluten Free soy sauce or You can use Gluten Free San J Brand Tamari
  2. 1 tablespoon lemon juice
  3. 1 tbsp. of Rice Wine Vinegar
  4. ¼ teaspoon grated fresh or powder ginger
  5. 1 small clove garlic, minced
